Carrots:

1.5 cups water

3.375 cups vinegar

1 cup sugar

1 teaspoon salt

.5 teaspoon pepper

1 teaspoon dill seed

.25 teaspoon red pepper flakes

Boil brine for 3 minutes

Boil carrots for 5 minutes

Bell peppers:

2.5 cups vinegar and water each

3 cups sugar

4.5 teaspoons salt

.5 teaspoons pepper flakes, pepper and dill seeds

Garlic and red onion

Brine for 3 minutes
